But these recipes don't! Introducing the Homemade Acai Bowl and the Mint Brownie Blizzard
The Monday after Holiday season hits different… and not in a good way. Here is to sticking to your New Year’s Resolution and maybe some recipes that can help you do so!
Homemade Acai Bowl
Fun Fact:
Each bowl costs less that $5 to make!
Ingredients:
Acai Smoothie Packet (I used the brand Sambazon which is in most major grocery stores)
1 cup Mango Chunks (frozen or not)
1/2 cup Blueberries
1/2 of a Banana
Apple Juice
Toppings
walnuts, coconut flakes, chia seeds, peanut butter, fruits, etc. (whatever your heart desires)
Directions:
Set out Frozen Acai smoothie packet and let it thaw into a liquid
Add acai packet, mango chunks, blueberries, and banana to a Creami cup
Pour in apple juice until it fills above all the ingredients above
Freeze overnight (at least 8 hours!)
Run frozen cup under lukewarm water so ice does not stick to the sides
Insert into Ninja Creami and run it under the “Sorbet” function
Re-spin as many times to get the consistency you want
Note: If you like a softer consistency, add splashes of apple juice or water before re-spinning until you reach your desired consistency
Top with preferred toppings (mine are walnuts, chia seeds, coconut flakes, bananas, blueberries, and peanut butter ofc)

Tips:
After your first spin, scrape the sides of the cups down before respinning to avoid an icy texture.
Here is an example of the consistency of the one I made after a spin on Sorbet function and 2 re-spins after splashing some apple juice in each time:
Mint Brownie Ice Cream Blizzard
Nutrition Facts:
260 Calories
26g Protein (No protein powder used)
Ingredients:
300mL Milk (or fill to just below max fill line… I use fat free fairlife milk)
7-10g sugar free/fat free Jello Vanilla Pudding Mix (about a tablespoon)
7-10g zero calorie sweetener (replace with sugar if that suits you best)
Peppermint Extract (about 5 drops)
Pinch of salt
Kodiak Brownie
Protein of choice (optional… if you do this, see below “tips” section)
Directions:
Add milk, pudding mix, sweetener, peppermint extract, and salt to Creami cup and mix well
Freeze overnight (at least 8 hours!)
Run frozen cup under lukewarm water so ice does not stick to the sides (like 30 seconds to a minute)
Insert into Ninja Creami and run it under the “Ice Cream” or “Light Ice Cream” function
Note: “Light Ice Cream” function will give it a soft serve type of consistency
Re-spin as many times to get the consistency you want
Note: If you like a softer consistency (like a blizzard), add splashes of milk before re-spinning until you reach your desired consistency
Cook Kodiak brownie in the microwave (instructions on how to do so are on the packaging) and add at least half of it to the Creami cup after it is cooked.
Run the Creami cup with the added brownie on the “mix-in” function

Tips:
If you are adding protein, Clean Simple Eats Vanilla Protein is your best friend. This is the only one I use as it doesn’t give of the chalky aftertaste that most proteins do! I usually do half of a serving here as a lot of protein comes from the Fairlife milk I use too!
Try your ice cream after your first spin. If it is not minty enough for you, add a few more drops of the peppermint extract before respinning
